Happy Hour Thursday!
Ingredients:
- 4 large peaches, pits removed and cut in half
- 2 tbsp. sugar
- 2 tbsp. lime juice
- 3 ounces vodka
- 1 tbsp. lime juice
- 1 tbsp. honey
- 1 cup sprite
- 4 slices of peaches, garnish
- 2 rosemary sprigs, garnish
- Using a food processor, add in the 4 peaches (pits removed), sugar and lime juice. Pulse until pureed. Pour the contents into a fine sieve over a bowl to catch the nectar. Using the back of a spoon, push through all the nectar you can and toss the bits that don’t make it through.
- [To make Rosemary Simple Syrup] Combine 2 cups of water, 2 cups of sugar, 3 tbsp. corn syrup and 1/4 cup rosemary leaves in a medium saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and rest for 20 minutes. Strain into a glass and refrigerate until chilled.
- Using a cocktail shaker filled with ice, add in vodka, lime juice, honey, 2 tbsp. rosemary simple syrup, 4 tbsp. peach nectar and shake. Pour into two cocktail glasses filled with ice and top with Sprite and a splash of water. Garnish with two peach slices per drink and a rosemary sprig.
- Serves 2.

Four Eyes!
In the past few years I've noticed the slow decline in my vision, first it was far away street signs, then the score on the tv (not that that's a priority), and then the menu at fast food restaurants (again, not a priority). I actually think it has to do with the number of hours I spend staring at the glare of a computer screen, working all day and then blogging all night. But I've decided to embrace this new opportunity to rock some geeky eyewear, and so the online shopping begins! This is of course the most difficult of all purchases to make online, no matter how much time I spend virtually trying them on with the webcam (this is super fun, you must try it!). So friends I think it's time to actually try these glasses on. Like on my face. You may have heard of Warby Parker, who sends you 5 pairs of glasses to try and choose your favorite, as well as donating a pair to someone in need for every purchase you make! In my search for glasses I also found Tortoise & Blonde and See By Us, both with very attractive vintage-inspired frames. It'll be a tough decision since glasses can dominate a look like no other accessory can, so maybe I'll let you all take a vote once I narrow it down!

Strawberry Basil Lemonade
Ingredients:
10 lemons, juiced, approx 1 cup of lemon juice
3/4 cup super fine sugar
4 cups water
8-10 strawberries, hulled
1/3 cup fresh basil
1/2 cup vodka (optional)
Directions:
Prep time: 10 min
Total time: 15 min
Total time: 15 min
Juice the lemons and transfer the juice into a large pitcher. Add the sugar and the water and stir to combine and dissolve the sugar. Add the strawberries and basil. Using an immersion blender, blend the mixture for about 20 seconds just until the mixture turns pink and the basil is finely chopped. Add alcohol if desired. Serve with lots of crushed ice and go sit out by the pool and enjoy!

Happy Hour Thursday!
Grapefruit Mojito
Makes 2 drinks
Ingredients:
1 grapefruit, segmented & juice reserved
20 mint leaves
4 teaspoons agave nectar
juice of 1 lime
1/4 cup + 2 Tablespoons reserved grapefruit juice
3oz rum (2 shots)
ice
sparkling water
Directions:
Muddle 4 grapefruit segments, mint, agave nectar and lime juice in the bottom of a martini shaker with the end of a wooden spoon. Add grapefruit juice and rum, then fill the shaker 3/4 full with ice. Shake until very cold then evenly divide between two glasses filled with ice. Top with sparkling water (to taste) and garnish with remaining grapefruit segments.
Mojitos just scream SUMMER! to me. It’s that fresh mint. I just love it!

1. Heat the water, honey and coriander seeds over medium heat until it begins to boil. Cover and refrigerate for at least one hour or longer; the longer it sits, the stronger the flavor. Drain the liquid from seeds and set aside.
2. To mix the drink, combine all ingredients (including the simple syrup, but not the seeds) over ice in a cocktail shaker. Shake and pour over ice and garnish with orange slices.

Blackberry Margarita
serves 4
salt
lime wedgess
1 cup tequila
1 cup blackberry juice
1/3 cup fresh lime juice
1/2 cup Cointreau
ice
Rim 4 glasses with salt. Place in the freezer to chill. In a pitcher, combine liquors and juices. Remove glasses from freezer and serve margaritas over ice. Garnish with lime slices.

Place all ingredients in a mixing tin with ice. Shake and strain into a rocks glass over fresh ice.
For Blood Orange Reduction:
Simmer 2 cups of blood orange juice until reduced by half.

Tibi Love - Spring 2012
