Beechers Cheese

Note to New York City cheese lovers: your cheese-eating options just increased by a pretty huge "one." Beechers Handmade Cheese, a Seattle-based cheese-maker and -monger, opened up a three-level factory / cafe / shop / restaurant-and-bar, right in the heart of Manhattan's Flatiron District, in a lovely landmark building on the corner of Broadway and 20th Street

The most delicious cheese ever....

and according to Oprah, this is the best mac and cheese....


Part of the reason I love NYC is that you can stumble upon random places like this on your walk home from work every day. I love this city!

happy monday!

Today started off great... with PUMPKIN muffins at Dunkin Donuts! The smell of Fall is in the air. This is my favorite type of weather - tshirts and sweatshirts Work is going great, I adore my co-workers and my boss gave me a lead on apartment rentals. Good things are coming! I also got to spend last night at the bar enjoying skittle bombs with my older brother, watching Nicky Swisher of the Yankees kill it! I can not wait for all the great things to come this week! xoxo

Anniversary Love

Happy Anniversary Mom and Dad...

After spending an amazing week in the stunning (and ever so chill and relaxing!) country of Spain, I thought it would be appropriate to post the recipe for the cocktail I enjoyed the most while there (other than all the red wine and sangria!). Below is the recipe for a Classic Mojito! I must say that I was enjoying the most delicious Strawberry Mojitos... with the freshest ingredients.


The Classic Mojito
2 oz. golden rum
5 mint sprigs
2 dashes simple syrup
1 dash fresh lime juice
Club soda

Put the mint into a high ball glass, add the rum, lime juice, and simple syrup. Crush with a bar spoon (or back of any spoon in a pinch) until the aroma of the mint is released. Add the crushed ice and stir vigorously until the mixture and the mint are spread evenly. Top with club soda and stir again. Serve with straws! Recipe serves 1.

I want to note that I also drank a lot of vodka and "Pina" (since they rarely had cranberry juice). Pina is actually "pineapple juice"... and it's delicious.

Absolute perfection. Rustic, Charming, Romantic candlelight dinner. This restaurant reminds me of Freeman's on the Lower East side. Grab a drink at the bar or enjoy a fabulous date... De Santos is definitely a place to try, along with there "All Saints" cocktail. I'm looking forward to heading back in the winter, when I can relax with a drink next to their fireplace.

MaC n CheeSe!

Made with beer :) Is there anything better than macaroni and cheese? I mean… really? I don’t think so either.
Easy Beer Mac and Cheese
serves 4-6

2 1/2 cups uncooked whole wheat elbow noodles
2 tablespoons butter
2 tablespoons flour
8 ounces milk
8 ounces beer - I prefer Bud Light, Miller Lite, or be crazy and try Guiness!
8 ounces freshly grated cheddar cheese
4 ounces freshly grated parmesan cheese
1/4 teaspoon smoked paprika
pinch of black pepper
pinch of nutmeg
1/2 cup panko bread crumbs
10 large basil leaves, chopped for garnish

Directions
Preheat oven to 375 degrees F.
Prepare water for pasta and boil according to directions, shaving 1-2 minutes off of cooking time since pasta will continue to cook in the oven.
Heat a saucepan over medium high heat and add butter. Once melted and sizzling, whisk in flour to create a roux and cook until bubbly and golden in color, about 2 minutes. Add milk and beer into saucepan whisking constantly, then add cheeses and stir until melted. Turn heat down to medium and continue to stir, cooking for 5-6 minutes while mixture thickens. It will most likely NOT thicken like regular mac and cheese because of the beer, but you want it to thicken a little bit. Stir in pepper, paprika and nutmeg.
Add noodles (once cooked and drained) to a casserole dish, then pour cheese over top, mixing gently to combine. Top with panko bread crumbs and an additional sprinkle of cheese if desired. Bake for 25-30 minutes or until bubbly and golden on top.
Remove from oven and let cool for 5 minutes, then top with fresh basil.

happy hour thursday...

This has my name alllll over it!
Cake Batter Martinis
(makes a single serving, is easily multiplied)

1 ounce amaretto
1 1/2 ounces Pinnacle whipped cream vodka
1 1/2 ounces creme de cacao
1/2 ounce Godiva white chocolate liqueur
1 ounce heavy cream
assorted sprinkles (nonpareils work best)
frosting

Using your finger, coat the rim of your glass with frosting – make sure not to miss any spots! Dump sprinkles on a plate and press glass rim into sprinkles, pressing to adhere. Combine all ingredients in a cocktail shaker with ice and shake for about 30 seconds. Strain into glass and drink!

I'm back...


I must say I'm very sad to be back... but from one stunning skyline to the next...

On my trip back into the city last night I shared a cab with a girl whose never been to New York. I get the chills just thinking about being able to witness someones first time seeing my city. Her eyes literally glowed when the skyline came into view. It was astonishing! I absolutely loved Spain, and can't wait to go again next summer - Greece too!! - but sometimes there's no place like home. xoxo

Nothing says summer to me like hanging out at the ballpark in the sunshine! So in honor of summer, baseball, and Yankee fans everywhere - this cocktail is for you!
cocktails at six. palmyra
The Palmyra:
2 1/2 oz vodka
1 oz mint simple syrup
1 oz fresh lime juice
Mint leaves and lime wedge for garnish

Combine vodka, simple syrup, and lime juice in shaker. Fill glass with ice. Cap with metal portion of Shaker and shake hard for 15 seconds. Strain into a pre-chilled cocktail glass. Garnish with mint leaves and a lime wedge.

So, my friends, if you happen to be enjoying a little baseball today - why not pour yourself one of these, and raise a glass to Nick Swisher while you're at it <3 (I heart him!)
